I admit it... I am addicted to hollandaise sauce. In fact my husband blames this addiction for all the gall bladder issues I had while pregnant with Pickle. Okay, so I did eat at least one fried egg a day SMOTHERED in the stuff during my last trimester- it was high in protein!.
But I no longer have a gall bladder, so we should be okay, right? :)
So today I was watching food network (LOVE it), and they were talking about how hollandaise sauce is just egg yolks, butter, and lemon juice. WAIT.....what?!? Pretty sure those powdered sauce mixes I buy at the store (yes I admit it) contain way more than that.
So I went online and browsed some recipes and decided I NEEDED to make some hollandaise sauce. I had 6 egg yolks left over from making cupcakes, so even though most recipes called for 3 or 4, I used 6.
Here was my recipe:
6 egg yolks
juice from one large lemon (I didn't measure it- sorry!)
dash of smoked paprika
dash of coarse sea salt
dash of pepper
1 cup butter
In a blender combine egg yolks, lemon juice and seasonings and blend on high until frothy. (about a minute)
Melt butter and pour into blender slowly while mixing. (Drizzle in through the hole in the lid.... DO NOT remove complete lid while blending on high- it won't be pretty!
Continue to blend until butter is fully incorporated!
It's just that easy! And delicious! And so unhealthy.... but delicious!

When they grow up....
I was nursing Pumpkin the other day and overheard this conversation between the other 2 children:
Pickle: "When I grow up I'm going to be a teacher, and a doctor, and.... I want to be everything!" - she really does want to be everything, from a mommy to a teacher, a librarian, doctor, and a blue car. Yup. She doesn't want to drive a blue car, she wants to BE a blue car. I can't judge, when I was her age I wanted to be a horse when I grew up. But back to my story....
She turned to her brother, "What do you want to be when you grow up?"
His answer was less ambitious, "a man."
Pickle: "You can't be JUST a man!"
Peanut: "Yes! I be man!"
Pickle: "But what KIND of man? A fireman? A mailman? A driver man?"
Peanut: "A GUMPY man!"
Pickle: "Mooooooooom! He said he's going to be a GRUMPY man when he grows up!"
At least it's a totally achievable goal!

Christmas activities
I finally started this blog! I've been playing with the idea of a blog for a long time.... since I was pregnant with Peanut actually.... and I did one post and never told anyone. Lol! I hope to keep this one up!
There is a school in our area that offers a drop-in program in the mornings during the week. We had been attending at least twice a week since the beginning of September but 3 weeks ago the kids started taking turns getting sick. So we've been stuck at home. It's been kind of nice, actually! I've enjoyed having the extra time to work on projects with the kids.
We have been busy! We've made salt dough ornaments, popcorn chains, cookies, coloured a puzzle, glitter glue trees, button trees, sock snowmen, thumbprint reindeer ornaments, and more! :) I will post some of those in more detail later!

I am mommy to 3 amazing children:
Pickle (my 3.5 yr old daughter);
Peanut (2 yr old son);
Pumpkin (5 mth old son) -my daughter picked the nicknames ;)
I am currently on maternity leave and am so grateful for every second with my children and my husband. God has blessed me so much and I thank Him for the miracles I am blessed with everyday.
This blog is just a place for me to share a glimpse into my blessed life as a mommy and wife.
